Directions

  1. 1Remove sun-dried tomatoes from the jar and chop them.
  2. 2Mince the garlic.
  3. 3Season the chicken breasts on both sides with salt and pepper.
  4. 4Heat avocado oil in a large skillet over medium-high heat.
  5. 5Sear the chicken on both sides for 3-4 minutes per side, then remove from pan and set aside.
  6. 6Turn the heat to medium-low and add a drizzle more avocado oil.
  7. 7Add the garlic to the oil and cook for about 30 seconds until fragrant, stirring often to keep it from burning.
  8. 8Add the coconut milk, stirring to deglaze the pan of any bits that have hardened.
  9. 9Add the chicken broth, sun-dried tomatoes, nutritional yeast, oregano, and crushed red pepper and stir.
  10. 10Bring to a simmer and add the chicken back to the pan.
  11. 11Cover and cook for 15 minutes at a simmer.
  12. 12Make a slurry mixture by whisking the arrowroot starch with a few tablespoons of chicken broth until no lumps remain.
  13. 13Once the chicken has finished cooking, move the chicken to the perimeter of the dish and whisk in the slurry mixture.
  14. 14Remove from heat and stir in the basil.
  15. 15Serve with more basil to garnish.
