Tear the tofu into bite-sized pieces and add them to a pot.
Squeeze the juice of two limes into the pot with the tofu.
Add half of a large shallot to the pot.
Add three lightly smashed cloves of garlic to the pot.
Add 3 sprigs of cilantro or parsley to the pot.
Pour water into the pot with the tofu and other ingredients, just enough to cover the tofu.
Add salt to the pot.
Boil the tofu and other ingredients.
Drain the tofu, separating it from the other ingredients.
In a bowl, mix two tablespoons of potato starch.
Add one teaspoon of adobo seasoning to the bowl.
Add one teaspoon of sazón to the bowl.
Add half a teaspoon of sweet paprika and half a teaspoon of dry Dominican oregano to the bowl.
Add black pepper to taste.
Whisk all the dry ingredients together in the bowl.
Transfer the boiled tofu to the bowl with the dry mixture.
Cover the bowl with a lid and shake it to coat the tofu.
Add one tablespoon of apple cider vinegar and two tablespoons of avocado oil to the coated tofu.
Shake the covered bowl again to mix the wet ingredients with the tofu.
Place the coated tofu pieces on a baking sheet lined with parchment paper.
Bake or pan-fry the tofu until they are golden.
For the dressing, combine three tablespoons of plant-based mayo, two tablespoons of ketchup, half a teaspoon of sweet paprika, and half a teaspoon of garlic powder in a measuring cup.
Squeeze the juice of half a lime into the dressing mixture.

Tips
These can be baked or fried, and they are extra good with plátanos fritos.
The heat and brine will help firm up your tofu without pressing it, and also draw in more flavor into your tofu.
