Directions

  1. 1Combine cherry tomatoes, salt, pepper, basil, oregano, fine-minced shallot, minced garlic, and extra virgin olive oil in a bowl.
  2. 2Mix all ingredients together.
  3. 3Place the mixture into a baking dish.
  4. 4Bake for 45 minutes at 400 degrees Fahrenheit.
  5. 5Once baked, smash the tomatoes.
  6. 6Alternatively, blend the mixture for a smoother sauce.
  7. 7Pour the pasta sauce into a serving bowl.
  8. 8Serve the sauce over pasta, garnished with Parmesan cheese and basil.
