Peel and cut carrots, parsnips, and sweet potatoes into chunks, and chop one small onion.

Place carrots, parsnips, sweet potatoes, and onion in the bottom of the crockpot.

Rub chicken breasts with minced garlic, dried thyme, dried rosemary, salt, and pepper.

Brown chicken in a pan with oil for color.

Place chicken on top of the vegetables in the crockpot.

Pour low-sodium chicken broth over the top.

Cook on low for 6-7 hours or high for 3-4 hours, until chicken is tender.

1 tbsp dried thyme
1 tbsp dried rosemary
0.5 tsp salt
0.5 tsp black pepper
1 cup low-sodium chicken broth
