  1. 1In a large skillet, heat olive oil over medium-high heat.
  2. 2Add ground beef and onion.
  3. 3Cook until beef is browned and onion is soft—about 6–7 minutes.
  4. 4Drain excess grease.
  5. 5Add sliced peppers and garlic.
  6. 6Cook for another 3–4 minutes, until peppers are just tender.
  7. 7Stir in uncooked noodles, broth, soy sauce, ketchup, brown sugar, black pepper, and cornstarch if using.
  8. 8Bring to a boil, then reduce heat to low.
  9. 9Cover and simmer for 10–12 minutes, stirring occasionally, until noodles are tender and sauce thickens.
  10. 10Let sit uncovered for 2 minutes.
  11. 11Garnish with green onions or sesame seeds if desired.
