1Make the sauce with dark soy, vinegar, sweet chilli, ketchup, honey and mix. Set aside
2Slice the chicken into thin strips, roughly 1/2cm. Place the chicken strips into a bowl and add light soy, sesame oil, egg and mix. Add cornflour, season and combine until fully coated.
3Spray oil into the air fryer, heat until 190c. Add the chicken in a single layer, you may have to do batches depending on the size of your air fryer. Spray the chicken with more oil and cook for 10 minutes, turning half way and spraying with a little more oil if you wish, until crisp.
4Meanwhile, add a oil to a large pan over a medium/high heat and fry off the onion and peppers for 2-3 minutes until they have some colour.
5Lower the heat and add garlic, ginger, chilli and fry for another minute.
6Off the heat, pour in the sauce, the crispy chicken, coriander and combine.
