High Protein Breakfast McMuffins

Directions

  1. 1Start by cracking 6 eggs into a bowl.
  2. 2Season the eggs with salt and pepper.
  3. 3Mix the eggs well.
  4. 4Pour the egg mixture into a greased baking dish.
  5. 5Add some chives to the egg mixture.
  6. 6Bake the egg mixture at 200 degrees Celsius for 5-7 minutes.
  7. 7Once cooked, cut the egg into 6 even slices.
  8. 8Grab your extra lean beef mince and add onion powder, garlic powder, salt, pepper, and chili powder (optional).
  9. 9Mix it all together and form 12 even 75g balls.
  10. 10To a pan on high heat, cook 6 slices of short cut bacon (or turkey bacon).
  11. 11Using your hands, flatten the meat patties as thin as you can.
  12. 12Cook the patties on high heat for 2 minutes on each side.
  13. 13Grab your toasted English breakfast muffin and start assembling.
  14. 14Place an egg slice on the muffin.
  15. 15Add two patties on top of the egg slice.
  16. 16Cut a slice of cheddar cheese and place each half on the patty.
  17. 17Add a piece of bacon.
  18. 18Spread 15g of spicy mayonnaise on the top bun.
  19. 19Repeat the process for the other 5 muffins.

  • 1 toasted English breakfast muffin
  • 1 egg slice
  • 2 patties
  • 1 slice cheddar cheese
  • 1 piece of bacon
  • 15 g spicy mayonnaise

Tips

  • Make sure to flatten each mince ball as thin as possible without breaking it; this will help it cook quicker and stops it from being dry.
  • If you don’t want to add the sauce all at once, you can add it after reheating the muffin.
  • Store in the freezer, thaw one in the fridge overnight and reheat it in the morning. You can either use an oven, air fryer or microwave. Remove from foil, microwave on each side for 1 minute then bake in the oven at 200 degrees Celsius for around 5 - 7 minutes (check and make sure the centre is warm/the muffins are crispy on the outside).
