Directions

  1. 1Season the cut pig ears with salt.
  2. 2Add pepper to the pig ears.
  3. 3Sprinkle garlic powder over the pig ears.
  4. 4Add red pepper flakes to the seasoned pig ears.
  5. 5Mix the seasonings thoroughly into the pig ears by hand.
  6. 6Place the seasoned pig ears into a large pot.
  7. 7Pour water into the pot with the pig ears.
  8. 8Add stock to the pot.
  9. 9Add bay leaves to the pot.
  10. 10Bring the mixture to a boil and cook.
  11. 11Once cooked, add hot sauce to taste.
  12. 12Serve the souse in a glass baking dish.
