1Add 450g of cubed chicken breast, 1 tsp olive oil, and spices (salt, pepper, paprika, garlic powder, onion powder) to a bowl and mix well, then set aside.
2In a separate bowl, prepare the teriyaki sauce by combining 3 tbsp light soy sauce, 3 tbsp honey, 1 tbsp vinegar, 1 tbsp minced garlic, 1 tbsp minced ginger, 1/4 cup water, and 1 tbsp corn starch or flour, then mix well.
3Add the seasoned chicken to a hot pan and cook for 4-5 minutes.
4Pour the teriyaki sauce over the chicken and cook for 1 minute until the sauce thickens.
5Remove the chicken from the pan and set aside.
6In the same pan, add 1 tsp olive oil, 1/2 chopped onion, and 1/3 cup peas & carrots, and cook until soft.
7Make room in the pan and add 3 beaten eggs, cooking until scrambled.
8Add 420g of cooked rice and 2 tbsp light soy sauce to the pan and mix well.
9Add the cooked teriyaki chicken back into the fried rice.
10Garnish with sesame seeds and green onions.

Tips
Optional toppings are sesame seeds and green onions for a traditional kick of flavour!
Replace or add any veggies of your choice such as broccoli and/or bean sprouts!
For a spicy taste, add chili flakes or hot sauce to your teriyaki sauce.
