Prepare the batter by whisking together half a cup of flour, half a cup of corn starch, half a teaspoon of baking powder, half a teaspoon of salt, half a teaspoon of white pepper, one egg, and half a cup of water.
Add the cut chicken into the batter and mix until fully coated.
Deep fry the battered chicken at 350-375 degrees Fahrenheit for about 5 minutes, or until golden brown.
Let the fried chicken rest for a second and then double fry it for extra crispiness.
Prepare the sauce by mixing 6 tablespoons of sugar, 6 tablespoons of brown sugar, 1 teaspoon of garlic powder, about half a teaspoon of crushed red peppers, 6 teaspoons of rice vinegar, 8 tablespoons of less sodium soy sauce, a quarter to half a teaspoon of ginger, 8 tablespoons of chicken broth, and 4 tablespoons of hoisin sauce.
Mix all sauce ingredients really well until the sugar has dissolved.
Make a cornstarch slurry by mixing 2 tablespoons of water with 2 tablespoons of cornstarch.
Pour the cornstarch slurry into the sauce and stir until the sauce thickens.
Add the fried chicken to the thickened sauce and toss to coat.
