Chicken dumpling soup

Directions

  1. 1Chop the yellow onion into small pieces using a food chopper.
  2. 2Add olive oil to a pan and melt half a stick of butter.
  3. 3Add the chopped onions to the pan.
  4. 4Chop the celery into small pieces using a food chopper.
  5. 5Add the chopped celery to the pan with the onions.
  6. 6Chop the carrots into small pieces.
  7. 7Add the chopped carrots to the pan and sauté the veggies until nice and soft.
  8. 8Add garlic, garlic powder, onion powder, salt, pepper, and chicken bouillon to the vegetables and mix.
  9. 9Add chicken stock and cream of cheddar soup to the pan and bring to a light boil.
  10. 10Shred the rotisserie chicken using a chicken shredder.
  11. 11Add the shredded chicken and peas to the soup.
  12. 12Prepare the Red Lobster cheddar biscuit mix by adding water and the seasoning packet (without the cheese).
  13. 13Roll the biscuit dough into small balls.
  14. 14Add the biscuit balls to the soup along with a little bit of heavy whipping cream.
  15. 15Cover the pot and cook until the biscuits are done, stirring occasionally.
  16. 16Serve the chicken dumpling soup in a bowl.

  • 1 rotisserie chicken
  • 32 oz chicken stock
  • 1 cup heavy whipping cream
  • 1 can cream of cheddar soup
  • 0.5 stick butter
  • 1 yellow onion
  • 1 cup celery, carrots, and peas
  • 1 tablespoon garlic
  • 2 teaspoons garlic powder
  • onion powder
  • chicken bouillon
  • salt
  • pepper
  • Red Lobster cheddar biscuits
  • olive oil

Tips

  • Use cream of cheddar soup instead of cream of chicken for a different flavor.
  • Do not add cheese to the biscuit mix, but use the seasoning packet.
