Peach Pie

Directions
- 1Roll out one disc of pie dough and place it into a pie dish.
- 2Roll out the second disc of pie dough and cut it into strips.
- 3Blanch the peaches in boiling water for one minute, then transfer them to an ice bath.
- 4Peel and slice the blanched peaches.
- 5In a large bowl, combine the sliced peaches with lemon juice, vanilla extract, granulated sugar, all-purpose flour, nutmeg, and salt.
- 6Pour the peach filling into the pie crust.
- 7Create a lattice top with the pie dough strips over the peach filling.
- 8Crimp the edges of the pie crust.
- 9Brush the top of the pie with egg wash and sprinkle with coarse sugar.
- 10Bake the pie in the oven until golden brown and the filling is bubbly.
- 11Let the pie cool before slicing and serving.
