Directions

  1. 1Peel all of the apples.
  2. 2Chop four of the peeled apples into small cubes.
  3. 3Cut the remaining two apples into half-moon slices to put on top of the cake.
  4. 4Squeeze lemon juice on both the diced and sliced apples to avoid them turning brown.
  5. 5Mix the diced apples to ensure the lemon juice is coating all of them.
  6. 6In a large bowl, add the sugar and crack in the eggs.
  7. 7Whisk the sugar and eggs together until well combined.
  8. 8Add the melted butter and milk to the egg mixture.
  9. 9Whisk the mixture all together again until well combined.
  10. 10Sieve in the flour and the baking powder into the wet ingredients.
  11. 11Add the zest of the whole lemon.
  12. 12Add the vanilla extract.
  13. 13Give the mixture a good mix until you reach a consistent, thick batter.
  14. 14Finally, stir in the chopped apples into the batter.
  15. 15Pour the mixture into the cake tin lined with parchment paper.
  16. 16Layer the apple slices all over the top, starting from the outside and working your way in.
  17. 17Sprinkle a little bit of sugar on top of the apple slices to get them nice and caramelised.
  18. 18Place the cake in the middle shelf of the oven and bake it for 45 minutes until nice and golden all over.
  19. 19Remove the cake from the tin and let it rest for at least 15 minutes.
  20. 20Sprinkle the cake with icing sugar all over before serving it.

Tips

  • To avoid the apples turning brown, squeeze lemon juice on them.
