Filet Mignon

Directions

  1. 1Finely chop the red onion, wild garlic, and parsley, then combine them in a bowl with a dash of paprika, a pinch of salt, and a splash of olive oil.
  2. 2Cut the beef filet mignon into equal medallions.
  3. 3Season both sides of the medallions with salt and pepper.
  4. 4Sear the medallions in a hot pan until browned on all sides.
  5. 5Remove the meat from the pan and add the bacon bits to the rendered fat to fry.
  6. 6Stir in the chopped herb and onion mixture.
  7. 7Pour in the heavy cream and simmer.
  8. 8Return the beef medallions to the pan and coat them with the sauce.
