Chop the scallions.

Peel the carrot.

Dice the carrot.

Cut the onion in half and dice it.

Chop the garlic cloves.

Add soy sauce, oyster sauce, water, and grated garlic to a bowl.

Add sugar and baking soda to the bowl.

Whisk the marinade ingredients together.

Slice the beef chuck into small pieces.

Add the sliced beef to the marinade.

Mix the beef well with the marinade, ensuring all sides are coated.

Crack eggs into a bowl.

Season the eggs with salt and pepper.

Whisk the eggs until well combined.

Add avocado oil to a pan and heat.

Add the marinated beef to the hot pan.

Cook the beef until cooked through and lightly charred.

Remove the cooked beef from the pan and set aside.

Add 2 Tbsp butter to the same pan and let it melt.

Add garlic, diced onions, carrots, and green peas to the pan.

Cook until the onions are softened and translucent.

Add cooked rice to the pan and mix with the vegetables.

Add 1 Tbsp of avocado oil and the whisked eggs to the empty side of the pan.

Scramble the eggs and cook almost all the way, then mix with the rice.

Add soy sauce, salt, white pepper, and sesame seeds to the fried rice.

Mix to combine all the ingredients.

Add the cooked beef back into the fried rice and mix.

Add another 2 Tbsp of softened butter, let it melt, mix, and cook for 2 minutes.

Mix in chopped scallions and cook for another minute.
