Apple Pie Caramel Pudding

Directions

  1. 1Dice 5 to 8 apples, either Granny Smith or Honeycrisp, using a handy dandy dicer for less work and better consistency.
  2. 2Melt two sticks of unsalted butter in a pan.
  3. 3Add the diced apples to the melted butter.
  4. 4Season the apples with cinnamon.
  5. 5Add about one cup of brown sugar to the apples.
  6. 6Add fresh lemon juice for balance.
  7. 7Mix the apples well.
  8. 8Cover the pan and let it cook for 5 minutes so the apples can render down.
  9. 9Add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) to thicken the apple filling.
  10. 10Stir until the apple filling thickens.
  11. 11Cover the apple filling and let it cool down completely.
  12. 12For the apple pudding, add 2 to 3 boxes of vanilla Jell-O mix into a bowl.
  13. 13Add 3 cups of milk per box of Jell-O mix (total of 9 cups for 3 boxes).
  14. 14Stir the pudding mix and milk together.
  15. 15Sprinkle in some cinnamon.
  16. 16Add 2 to 3 spoonfuls of the apple filling juice to enhance the flavor.
  17. 17Stir the pudding again.
  18. 18Wrap the pudding and allow it to get thick and cold.
  19. 19Once the pudding is thick, add in whipped cream and fold it in.
  20. 20Begin assembly by placing a layer of Chessman cookies at the bottom of a serving dish.
  21. 21Spread a layer of pudding evenly over the cookies.
  22. 22Add a layer of apple filling on top of the pudding.
  23. 23Sprinkle some crushed vanilla wafers and Chessman cookies over the apple filling.
  24. 24Repeat the layers: pudding, apple filling, crushed cookies.
  25. 25The last layer should be Chessman cookies.
  26. 26Top with caramel for a little pizzazz.
  27. 27Let it sit in the fridge overnight.

Tips

  • If you have leftover apple filling, you can always make another dessert with it.
  • If you want to add the apple filling to the pudding instead of whipped cream, that's okay.
