Directions
1
Dice 5 to 8 apples, either Granny Smith or Honeycrisp, using a handy dandy dicer for less work and better consistency.
2
Melt two sticks of unsalted butter in a pan.
3
Add the diced apples to the melted butter.
4
Season the apples with cinnamon.
5
Add about one cup of brown sugar to the apples.
6
Add fresh lemon juice for balance.
7
Mix the apples well.
8
Cover the pan and let it cook for 5 minutes so the apples can render down.
9
Add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) to thicken the apple filling.
10
Stir until the apple filling thickens.
11
Cover the apple filling and let it cool down completely.
12
For the apple pudding, add 2 to 3 boxes of vanilla Jell-O mix into a bowl.
13
Add 3 cups of milk per box of Jell-O mix (total of 9 cups for 3 boxes).
14
Stir the pudding mix and milk together.
15
Sprinkle in some cinnamon.
16
Add 2 to 3 spoonfuls of the apple filling juice to enhance the flavor.
17
Stir the pudding again.
18
Wrap the pudding and allow it to get thick and cold.
19
Once the pudding is thick, add in whipped cream and fold it in.
20
Begin assembly by placing a layer of Chessman cookies at the bottom of a serving dish.
21
Spread a layer of pudding evenly over the cookies.
22
Add a layer of apple filling on top of the pudding.
23
Sprinkle some crushed vanilla wafers and Chessman cookies over the apple filling.
24
Repeat the layers: pudding, apple filling, crushed cookies.
25
The last layer should be Chessman cookies.
26
Top with caramel for a little pizzazz.
27
Let it sit in the fridge overnight.
