1Start by creaming your softened butter and sugars until light and fluffy.
2Next, incorporate your egg yolks, vanilla extract, and mashed banana.
3Mix until super smooth and evenly incorporated.
4Then fold in your dry ingredients including your banana cream pudding mix, salt, baking soda and flour.
5When your dough has come together, fold in your white chocolate, Nilla wafers, and banana chips.
6Scoop out 15 equal sized dough balls.
7Flatten them a bit.
8Add more white chocolate and Nilla wafers on top.
9Bake on 350 for 12 and a half minutes.
10Make a quick glaze by mixing powdered sugar and milk.
11Drizzle the glaze over the baked cookies.
12Add a bit more crushed Nilla wafer on top of the glaze.

1 large over ripe banana, mashed
4 cups AP flour
1 box banana cream pudding mix
2 tsp baking soda

8 oz white chocolate chips
2 cups nilla wafers
1 cup banana chips
1 cup powdered sugar
2 tbsp milk

Tips
The banana chip pieces can be optional, but they add a nice crunch to the cookie, similar to having nuts in banana bread without actually having to use nuts, which is perfect if you're allergic to nuts.
Always underbake these cookies because underbaked cookies are superior.
Make your glaze a bit thicker than mine, but this one worked just fine.
