Fudgy Reese's Protein Cookies

Serves 8

Directions

  1. 1Preheat your oven to 350F.
  2. 2Mix chocolate protein powder, cottage cheese, and almond flour in a bowl.
  3. 3Shape the mixture into cookies on a parchment-lined baking sheet.
  4. 4Swirl in peanut butter on top of each cookie.
  5. 5Bake them for 15 minutes at 350F.
  6. 6Take them out, let cool completely before serving and enjoy!

Ingredients

  • 1 scoop chocolate protein powder
  • 1 cup cottage cheese
  • 1 cup almond flour
  • 3 tbsp sweetener
  • 4 tbsp sweetener
  • 2 tbsp peanut butter
  • 1 tbsp cocoa powder

Equipment

bowlbaking sheetparchment papersilicon spatula

Tips

  • If you don’t have chocolate protein, this totally works with cocoa powder in its place. Just use 2-3 tbsp.
  • I greased a silicon spatula to shape them easily into cookies because the dough is super sticky.
  • Mixing some sweetener into the peanut butter helps the flavor and texture a lot. I also recommend heating it up before swirling, it will make things much easier.
