Healthy Chicken Feta Basil Meatballs

Directions

  1. 1Grate the courgette.
  2. 2Combine the chicken mince, grated courgette, garlic, feta, basil, egg, breadcrumbs, salt and pepper in a large bowl.
  3. 3Mix well using your hands until evenly combined.
  4. 4Wet your hands and roll into balls.
  5. 5Cook meatballs in a pan.
  6. 6Heat a little olive oil and break up the reserved meatball into the pan.
  7. 7Add the red onion, red pepper, garlic, cook for 5 minutes until soft.
  8. 8Stir in the harissa, tomato purée, cook for 1–2 minutes more.
  9. 9Pour in the tinned cherry tomatoes, add a little bit of water to the tins and tip in, crumble in the stock cube.
  10. 10Simmer gently for 15–20 minutes until the tomatoes have burst and the sauce has thickened.
  11. 11Cook your spaghetti until al dente.
  12. 12Toss the spaghetti into the sauce.
  13. 13Add the cooked meatballs to the sauce and warm through for 3 minutes.
  14. 14Toss everything together.
  15. 15Serve and finish with fresh basil and plenty of parmesan.

  • 100 g feta cheese
  • handful fresh basil
  • 1 egg
  • 4 tbsp dried breadcrumbs
  • pinch salt
  • pinch pepper
  • 2 red onions
  • 2 red peppers
  • 2 tsp harissa
  • 2 cloves garlic
  • 2 tins whole cherry tomatoes
  • 2 tbsp tomato purée
  • 1 chicken stock cube
  • handful fresh basil
  • 75 g spaghetti
  • Parmesan

Tips

  • Wet hands before rolling the meatballs to prevent sticking.
