1Heat a little oil in a small frying pan with diced shallot and a pinch of salt.
2After a few minutes, add garlic and cumin powder to the frying pan. Stir for about a minute, then remove from heat.
3In a large bowl, mash together the black beans, feta, and sundried tomato paste until mostly smooth with some lumps.
4Add the cooled shallot mixture, quinoa, parsley, breadcrumbs, and walnuts to the bowl. Season well and stir to combine.
5Beat in the egg to the mixture.
6Divide the mixture into 5 balls, pressing firmly to ensure they stick when cooked. Gently flatten each, pushing inwards on the edges to shape and prevent splitting.
7Heat a large non-stick frying pan with a good amount of olive oil. Once hot, add the burgers and fry for 5-10 minutes on each side until nicely browned.
8While the burgers are frying, mix the ingredients for the burger sauce: honey, Dijon mustard, and light mayo.
9Load up your burger buns with the fried patties, burger sauce, and your favorite salad bits like rocket, red onion, cucumber, and tzatziki.

Tips
No need for a blender, just use elbow grease to mash ingredients.
Add feta for a delicious fattiness like a normal burger.
The burgers get a gorgeously nutty brown exterior when fried.
