Homemade Gyro Meat

Directions

  1. 1Grab a food processor, small onion, three cloves of garlic, and puree until it's nice and fine.
  2. 2Add four ounces of bacon to add the fat, and pulse.
  3. 3Add two pounds of ground lamb, cumin, oregano, salt, pepper, and some Aleppo pepper.
  4. 4Process for a minute or two until it gets nice and sticky. It should look like a paste, not like a hamburger.
  5. 5Onto a sheet tray with parchment paper, mound it into a loaf.
  6. 6Place the meat loaf into a 325-degree oven or smoker.
  7. 7Let it cook for 30 to 40 minutes or until the internal temperature is 155 degrees Fahrenheit.
  8. 8Pop it in the fridge to cool completely.
  9. 9Once it's cooled, cut about quarter-inch slices.
  10. 10Drop it into a hot pan with some oil and keep flipping it until it's nice and golden brown all over.
  11. 11Assemble your gyro however you like, with tzatziki, onions, tomatoes, cucumbers, and of course, the meat.

Tips

  • You can use ground lamb, lamb and beef, lamb and pork, chicken, or whatever you want.
  • If you want to use other meats, you can omit the bacon, just make sure the meat has enough fat.
  • Let the cooked meat cool completely, or even leave it in the fridge overnight, this will make slicing easier.
