Halloumi Potato Scarpaccia
Directions
- 1Grate potatoes and put them in a bowl with cold water.
- 2Squeeze the excess water from the grated potatoes.
- 3Grate the halloumi cheese and add it to the bowl with the potatoes.
- 4Add the flour, thyme and salt to the bowl.
- 5Add olive oil and mix all ingredients.
- 6Pour the mixture into a hot cast iron pan.
- 7Cook the mixture into a flat shape and cook until golden brown.

- 150 g halloumi cheese
- 100 g plain flour
- 1 tsp thyme
- 1 pinch salt
- 2 tbsp olive oil
