In a bowl, mix water, brewer's yeast (or dry yeast), and sugar.

Add bread flour and salt to the bowl.

Mix all ingredients until a dough forms. No need to knead.

Cover the bowl and let rise for 30 minutes.

With a wet hand, stretch the four sides of the dough and fold them to the center.

Lift the dough from the center and slap it back into the bowl.

Let rest for 30 minutes.

Repeat steps 5 and 6.

Let rise for 2 hours.

Sprinkle flour on your work surface and turn the dough out onto it. Fold the dough over itself to make it easier to cut.

Cut the dough into 6 equal parts.

Make each part into a ball and rub it against the work surface to seal the seam.

Let rest for 10 minutes.

Flatten each ball, roll and press down with your fingers to create a seam.

Place the rolls seam down on a baking tray lined with baking paper.

Cover with a towel and let rise for 30 minutes.

Score the bread with a sharp blade or knife.

Splash with water and sprinkle some flour on top.

Cover with another baking tray and bake at 450°F (230°C) for 20 minutes.

Remove the top tray and bake for 10 more minutes at 390°F (200°C).
