Directions
- 1Cut open a pig's kidney.
- 2Remove tissue from the kidney.
- 3Make shallow cuts with your left hand on the kidney.
- 4Turn 90 degrees and cut the kidney into equal pieces.
- 5Pour 250ml of unexpired beer over the kidney pieces.
- 6Gently massage the kidney in the beer, then rinse and drain.
- 7Add 1/3 tsp salt, 1/3 tsp ground pepper, and 1 tsp cornstarch to the kidney.
- 8Stir well with your hand.
- 9Place the kidney in boiling water.
- 10Blanch the kidney for 39 seconds.
- 11Add 1 tsp chopped garlic, 1 tsp chopped ginger, and 1 tsp chopped red chili pepper to a wok with hot oil.
- 12Add 5 tsp chopped garlic chive to the wok.
- 13In a separate bowl, mix 3 tsp light soy sauce, 1 tsp dark soy sauce, 1 tsp oyster sauce, 1/3 tsp salt, 1/3 tsp chicken bouillon, and 1/3 tsp sugar.
- 14Mix the sauce well.
- 15Pour the sauce into the wok and cook until bubbling.
- 16Evenly pour the sauce over the cooked pork kidney.
