Directions

1Thinly slice the cucumbers, add to a large bowl and sprinkle with the salt.
2Set aside for 15 minutes to allow the salt to pull out extra moisture from the cucumbers.
3Meanwhile, mix the soy sauce, rice vinegar, sesame oil, sugar, red pepper flakes, minced garlic, and minced ginger together for the sauce.
4Discard the salty moisture from the bowl of cucumbers; you can also use a paper towel to soak up the liquid and dab up the moisture.
5Add the prepared sauce mix to the bowl with cucumbers and mix well.
6Top the cucumber salad with Chili Onion Crunch or sesame seeds.
7For the Chili Onion Crunch, measure dried minced garlic, dried toasted onion, smoked paprika, chili powder, red pepper flakes, and salt.
8Add all Chili Onion Crunch ingredients to a medium bowl or a glass jar.
9Mix the Chili Onion Crunch well and enjoy.
10Store the Chili Onion Crunch in a small glad jar with an airtight lid.
