Mississippi Pot Roast

Directions

  1. 1Pat the chuck roast dry.
  2. 2Add salt and pepper to both sides of the chuck roast.
  3. 3Sear the chuck roast on each side for about 5 minutes on high heat to lock in the flavor.
  4. 4Place the seared chuck roast in a crock pot.
  5. 5Add diced carrots to the crock pot.
  6. 6Add a yellow onion to the crock pot.
  7. 7Add a stick of butter to the crock pot.
  8. 8Season with garlic powder, onion powder, paprika, and Mrs. Dash.
  9. 9Add a ranch seasoning packet to the crock pot.
  10. 10Add an au jus gravy packet to the crock pot.
  11. 11Add pepperoncinis to the crock pot.
  12. 12Add a splash of chicken broth to the crock pot.
  13. 13Cook the roast on high for 4 hours.
  14. 14For the mashed potatoes, boil 5 pounds of russet potatoes until fork-tender.
  15. 15Drain the boiled potatoes and place them in a bowl.
  16. 16Add butter, cream cheese, sour cream, heavy cream, salt, and pepper to the potatoes.
  17. 17Blend the potatoes with a hand mixer until smooth.
  18. 18Serve the Mississippi Pot Roast with mashed potatoes, green beans, and dinner rolls.

Tips

  • Add as many pepperoncinis as you want.
  • Don't measure the ingredients for mashed potatoes; it will always come out perfect.
