Nonna's lemon ring biscuits

Directions

  1. 1Beat 4 eggs in a bowl.
  2. 2Add lemon zest to the beaten eggs.
  3. 3Pour 2 tablespoons of lemon juice into the mixture.
  4. 4Add 250g of sugar.
  5. 5Mix all ingredients together.
  6. 6Add 125g of melted butter.
  7. 7Add 2 teaspoons of baking powder.
  8. 8Add 1 tablespoon of vanilla essence.
  9. 9Add 1 tablespoon of almond extract.
  10. 10Pour 500g of self-raising flour into the bowl.
  11. 11Mix all ingredients together until combined.
  12. 12Add some flour to a board.
  13. 13Roll the dough from the bottom to the top on the floured board.
  14. 14Add more flour if you need it and continue to roll the dough until soft.
  15. 15Cut off a piece of the dough.
  16. 16Roll out the dough into a long strand.
  17. 17Put the ends of the dough on top of each other and twist.
  18. 18Keep twisting the dough until the end.
  19. 19Cut the twisted dough in half.
  20. 20Make small rings by connecting the ends of the twisted dough.
  21. 21Place the rings on a lined baking tray.
  22. 22Bake the biscuits for 25 minutes at 180 degrees Celsius.
  23. 23To make the lemon glaze, add juice of 1/2 a lemon to 1/2 cup of icing sugar.
  24. 24Mix together, making sure there are no clumps.
  25. 25Dip the top of each biscuit in the glaze.

Tips
