Beat 4 eggs in a bowl.

Add lemon zest to the beaten eggs.

Pour 2 tablespoons of lemon juice into the mixture.

Add 250g of sugar.

Mix all ingredients together.

Add 125g of melted butter.

Add 2 teaspoons of baking powder.

Add 1 tablespoon of vanilla essence.

Add 1 tablespoon of almond extract.

Pour 500g of self-raising flour into the bowl.

Mix all ingredients together until combined.

Add some flour to a board.

Roll the dough from the bottom to the top on the floured board.

Add more flour if you need it and continue to roll the dough until soft.

Cut off a piece of the dough.

Roll out the dough into a long strand.

Put the ends of the dough on top of each other and twist.

Keep twisting the dough until the end.

Cut the twisted dough in half.

Make small rings by connecting the ends of the twisted dough.

Place the rings on a lined baking tray.

Bake the biscuits for 25 minutes at 180 degrees Celsius.

To make the lemon glaze, add juice of 1/2 a lemon to 1/2 cup of icing sugar.

Mix together, making sure there are no clumps.

Dip the top of each biscuit in the glaze.

Tips
Add more flour if needed when kneading the dough.
The dough is ready when it looks soft.
Make sure there are no clumps when mixing the lemon glaze.
