- 1Unpack the ground sirloin.
- 2Place the ground sirloin into a hot pot.
- 3Season the ground sirloin with salt.
- 4Season the ground sirloin with black pepper.
- 5Brown the ground sirloin, breaking it up with a wooden spoon.
- 6Remove the browned ground sirloin from the pot and set aside.
- 7Dice the onions.
- 8Mince the garlic using a mortar and pestle.
- 9Dice the bell pepper.
- 10Add the minced garlic to the pot with the sautéed onions.
- 11Add the diced bell pepper to the pot.
- 12Prepare the first spice mix with cumin powder, chili powder, and black pepper.
- 13Add the first spice mix to the pot.
- 14Add tomato paste to the pot.
- 15Stir the tomato paste and spices into the vegetables.
- 16Remove the seeds and stems from the dried pasilla and Kashmiri chilies.
- 17Rehydrate the dried chilies in hot water.
- 18Chop the rehydrated chilies.
- 19Chop chipotles in adobo sauce.
- 20Add diced tomatoes to the pot.
- 21Add beef stock to the pot.
- 22Add stout beer to the pot.
- 23Prepare the second spice mix with cumin and coriander.
- 24Add the second spice mix to the pot.
- 25Return the browned ground sirloin to the pot.
- 26Simmer the chili on low heat for 2 hours, covered.
- 27Add smoked paprika and chipotle powder to the chili.
- 28Add apple cider vinegar to the chili.
- 29Add dark chocolate to the chili.
- 30Add rinsed kidney beans to the chili.
- 31Simmer for a final 30 minutes on low heat, covered.
- 32Stir the chili.
- 33Serve the chili into a bowl.
- 34Top the chili with shredded cheese.
- 35Add a dollop of sour cream on top of the chili.
- 36Garnish with chopped scallions.

- 1 tsp Coriander
- Smoked paprika
- Chipotle powder
- 1 tbsp Apple cider vinegar
- 2 tbsp Dark chocolate (85% cocoa)
- 1 can Kidney beans
- Shredded cheese
- Sour cream
- Scallions
