Generously season chicken breasts with salt, pepper, garlic powder, cayenne pepper, red pepper flakes, thyme, oregano, and dried basil.

Finely dice a large shallot.

Crush and roughly chop some garlic.

Heat a generous amount of olive oil in a heavy-bottom pot over medium-high heat.

Carefully lay the chicken into the pot. If the pot isn't big enough, cook in batches to avoid overcrowding.

Once the chicken is fully cooked, remove it from the pot and either chop or shred it.

Add a little more olive oil to the pot, then add the garlic and shallots.

Squeeze in a little bit of tomato paste.

Add the sun-dried tomatoes.

After a few minutes, add a whole lot of chicken stock.

After about 15 minutes, add in the heavy cream and a good amount of Parmigiano cheese.

Let it simmer to thicken up.

After about 20 minutes, salt to taste.

Add in cold butter, the cooked chicken, gnocchi, and a handful of spinach.

Cover and let it cook for five more minutes.

Tips
Do not overcrowd the pot when cooking chicken; cook in batches if necessary.
Add more seasoning if you can still see chicken.
Let the soup simmer to thicken up before adding final ingredients.
