One Pot Chicken Gnocchi Soup

Directions

  1. 1Generously season chicken breasts with salt, pepper, garlic powder, cayenne pepper, red pepper flakes, thyme, oregano, and dried basil.
  2. 2Finely dice a large shallot.
  3. 3Crush and roughly chop some garlic.
  4. 4Heat a generous amount of olive oil in a heavy-bottom pot over medium-high heat.
  5. 5Carefully lay the chicken into the pot. If the pot isn't big enough, cook in batches to avoid overcrowding.
  6. 6Once the chicken is fully cooked, remove it from the pot and either chop or shred it.
  7. 7Add a little more olive oil to the pot, then add the garlic and shallots.
  8. 8Squeeze in a little bit of tomato paste.
  9. 9Add the sun-dried tomatoes.
  10. 10After a few minutes, add a whole lot of chicken stock.
  11. 11After about 15 minutes, add in the heavy cream and a good amount of Parmigiano cheese.
  12. 12Let it simmer to thicken up.
  13. 13After about 20 minutes, salt to taste.
  14. 14Add in cold butter, the cooked chicken, gnocchi, and a handful of spinach.
  15. 15Cover and let it cook for five more minutes.

Tips

  • Do not overcrowd the pot when cooking chicken; cook in batches if necessary.
