Directions

  1. 1Crush piri piri peppers and tomato paste in a mortar and pestle.
  2. 2In a hot skillet, sauté white onions in avocado oil until caramelized.
  3. 3Add the chili paste, oregano, cayenne pepper, smoked paprika, ground ginger, brown sugar, and bay leaves. Mix everything together and cook for about four minutes.
  4. 4Deglaze with beef stock. Mix and let it reduce.
  5. 5Blend the mixture until everything is liquefied.
  6. 6Strain the mixture through a sieve to make it superfine.
  7. 7Season the steaks and chicken; one with salt and pepper, and the other with piri piri seasoning.
  8. 8Grill the steaks and chicken.
  9. 9Make the Francesinha sandwich: toast the bread, layer ham, chorizo, mozzarella cheese, steak, and more mozzarella cheese, then add the top slice of toast.
  10. 10Bake the sandwich in the oven until the cheese melts.
  11. 11Add the Francesinha sauce to the plate, add the sandwich, followed by a fried egg.

  • 1 generous amount salt
  • 1 generous amount freshly ground black pepper
  • 1 generous amount garlic powder
  • 3 eggs
  • 6 Chorizo sausages
  • 2 slices old fashioned ham
  • 4 slices mozzarella cheese
  • 2 slices bread
  • 1 cup white wine
  • 1 cup porto wine
  • 1 tsp chicken bullion powder
  • 1 tsp worcestershire sauce
  • 1 tsp ketchup
  • 1 tsp milk
  • 1 tsp all purpose flour
  • 1 cup oxtail stock
