1Combine 2 cups + 2 tbsp of bread flour and 3/4 tsp of salt.
2In a large bowl, combine 1/2 cup of lukewarm water, 2 tsp of active dry yeast, and 2 tsp of sugar. Mix well and set aside for 15 minutes.
3Add 1/3 cup of milk, 2 tbsp of olive oil, and 1 egg. Whisk to combine.
4Combine with the dry ingredients and knead the dough for 15 minutes.
5Add a little bit of olive oil and store in a large bowl in a warm place for 1 to 2 hours.
6Divide the dough into 8 pieces.
7For the filling, sauté 1 cup of chopped onion and brown 600 grams of ground beef.
8Add 4 tbsp of tomato paste, 3 cloves of chopped garlic, 1 tbsp of Worcestershire sauce, 1 tbsp of Maggi sauce, 2 tbsp of yellow mustard, 1 tbsp of dried oregano, 1 cup of diced green pepper, and 1 1/2 cups of sliced mushrooms.
9Season with salt and ground pepper.
10Roll out the dough into a circle, add a slice of mozzarella cheese, 3 tbsp of the filling, and more cheese on top. Fold and enclose the dough to form a round bun.
11Brush the buns with egg wash and sprinkle some chopped parsley.
12Bake at 350°F for 20 to 25 minutes.
