Sheet Pan Quesadillas

Directions

  1. 1Preheat oven to 450°F (232°C).
  2. 2In a large bowl, mix together chicken, cheese, black beans, corn, Rotel tomatoes and chiles, red onion, sour cream, and taco seasoning. Set aside.
  3. 3Brush a cookie sheet with melted butter.
  4. 4Layer tortillas on the cookie sheet as shown in the video, overlapping them to create a base for the quesadilla.
  5. 5Evenly spread the chicken mixture on top of the layered tortillas.
  6. 6Place two tortillas in the center of the mixture and fold over the surrounding tortillas to cover the filling.
  7. 7Brush the remaining melted butter on top of the folded tortillas.
  8. 8Place a second cookie sheet on top of the quesadilla to weigh it down during baking.
  9. 9Bake for 25-35 minutes (the video creator baked for 30 minutes as her oven runs hot).
  10. 10Remove from the oven, cut into slices, and serve hot with desired toppings.
