Directions

  1. 1Slice the potatoes into small cubes.
  2. 2Add taco seasoning mix (salt, pepper, garlic, onion powder, paprika, chilli powder, cumin, oregano) and olive oil to the potatoes.
  3. 3Mix the potatoes well.
  4. 4Oven bake the potatoes for 22 minutes at 200°C or air fry for 20 minutes at 200°C.
  5. 5Prepare the chipotle spicy sauce by adding 100g yogurt, 80g light mayo, 50g chipotle chilli paste, hot sauce, 20g honey, salt, paprika, and garlic powder to a blender.
  6. 6Blend the sauce until it is smooth and creamy.
  7. 7Bottle up the sauce and store it in the fridge.
  8. 8Make the fresh salsa by combining chopped tomatoes, red onion, bell peppers, coriander/cilantro, spice blend (salt, pepper, cumin, garlic, paprika), and lime juice in a bowl.
  9. 9Mix the salsa until all ingredients are well combined.
  10. 10Heat a pan on high heat, add 15g grass-fed butter.
  11. 11Cook 800g ground beef for 8 minutes.
  12. 12Add tomato paste and more taco seasoning mix to the beef.
  13. 13Mix and cook for 4 minutes until golden brown.
  14. 14Add low-fat grated mozzarella cheese to the beef.
  15. 15Evenly distribute the seasoned potatoes, beef with cheese, salsa, and chipotle spicy sauce into four servings.

Tips

  • Season the potatoes thoroughly and mix till well coated. Make sure you don’t over cook them.
  • Make the sauce in advance and store in the fridge to use for any other meal.
  • Same thing with the Pico/Salsa, store in a container in batches.
  • Cook the beef till brown then add all the ingredients. You can add a little water to add moisture if it’s too dry.
  • Reheat the potatoes and beef only. You can store the salsa separately to make it easier.
