1In a large frying pan over medium to medium-high heat, add a drizzle of olive oil.
2Take 3 slices of mortadella, fold them loosely, and form three separate small stacks.
3Fry each stack until the bottoms become crispy.
4Flip the stacks and top each with a slice of provolone cheese.
5Continue stacking the mortadella slices on top.
6Using the same pan, lightly toast your bread/bun with a touch of olive oil until golden brown (this step can also be done ahead of time).
7Spread mayonnaise on the bottom half of the toasted bun and Dijon mustard on the top half.
8Finally, assemble your sandwich by placing the layered mortadella and melted cheese onto the bottom bun, topping it with the other half, and serving immediately.
