Homemade Gyro Meat

Directions

  1. 1Grab a food processor.
  2. 2Add a small onion and three cloves of garlic to the food processor.
  3. 3Puree the onion and garlic until nice and fine.
  4. 4Add 4 ounces of bacon to the food processor with the pureed onion and garlic.
  5. 5Pulse the bacon with the onion and garlic until fine.
  6. 6Add 2 pounds of ground lamb, cumin, oregano, salt, and pepper to the food processor.
  7. 7Process the mixture for a minute or two until it gets nice and sticky, looking like a paste.
  8. 8Transfer the meat mixture onto a sheet tray with parchment paper.
  9. 9Mount the meat mixture into a loaf shape.
  10. 10Cook the loaf in a 325-degree oven or smoker.
  11. 11Cook for 30 to 40 minutes or until the internal temperature is 155 degrees Fahrenheit.
  12. 12Pop the cooked gyro meat into the fridge to cool completely.
  13. 13Once cooled, cut about quarter-inch slices of the gyro meat.
  14. 14Drop the sliced gyro meat into a hot pan with some oil.
  15. 15Keep flipping the meat until it's nice and golden brown all over.
  16. 16Assemble your gyro with Greek pita, tzatziki, meat, onions, tomatoes, and cucumbers.

Tips

  • Ensure onion and garlic are pureed nice and fine.

  • You can use ground lamb, lamb and beef, lamb and pork, chicken, or any other meat you want.
  • If using other meats, you can omit the bacon, just make sure the meat has enough fat.
