Slow Cooked Smoky Pulled Pork

Directions

  1. 1Add black pepper, paprika, onion powder, garlic powder, chipotle, mustard powder, and salt to a bowl to create a rub.
  2. 2Pat dry the pork shoulder and coat it thoroughly with the rub.
  3. 3Deseed the red pepper and quarter the onion.
  4. 4Heat olive oil in a pan on high heat.
  5. 5Add the red pepper, onion, and garlic to the pan and get some color on them.
  6. 6Transfer the colored vegetables into the slow cooker.
  7. 7Sear the seasoned pork joint on all sides (top and bottom) in the same pan until it has a good color.
  8. 8Transfer the seared pork joint into the slow cooker on top of the vegetables.
  9. 9Deglaze the pan with chicken stock, Worcestershire sauce, apple cider vinegar, and balsamic vinegar.
  10. 10Add bay leaves, thyme, and pitted prunes to the deglazed pan.
  11. 11Cook the liquid for 2 to 3 minutes, then add a potato starch slurry to glaze the pork joint as you pour it over.
  12. 12Pour the sauce over the pork and vegetables in the slow cooker.
  13. 13Once cooked, discard the bay leaves and thyme from the slow cooker.
  14. 14Transfer the cooked pork joint to a chopping board and pull it apart with two forks.
  15. 15Transfer the remaining juices from the slow cooker to a blender and blend until smooth.
  16. 16Pour the blended sauce into a pan and cook it down to a nice thick sauce.
  17. 17Return the pulled pork to the slow cooker and pour the thickened sauce over it.
  18. 18Mix the pulled pork with the sauce until it is well coated.
