Directions

  1. 1In a large pot, saute scallions and garlic in olive oil until they start to brown.
  2. 2Add paprika and cook for about 30 seconds.
  3. 3Add bread cubes.
  4. 4Add chicken stock and cook for 15 minutes, whisking until the bread thickens the soup.
  5. 5Meanwhile, in a separate skillet, make croutons by sauteing bread cubes with olive oil, scallions, salt, and pepper until you get a crisp exterior and a soft interior.
  6. 6Temper some egg yolks.
  7. 7Add the tempered egg yolks into the soup, whisking.
  8. 8Serve in a bowl on top of the croutons.

  • 1 cup scallions
  • 1 cup garlic
  • 1 tablespoon smoked paprika
  • 1 cup bread cubes
  • 4 cups chicken stock
  • 4 egg yolks
