Wagyu Beef Hummus

Directions

  1. 1Soak chickpeas overnight.
  2. 2Transfer the soaked chickpeas to a pot or pressure cooker.
  3. 3Submerge chickpeas with clean water.
  4. 4Add a tiny kiss of baking soda.
  5. 5Pressure cook chickpeas on high for 20 minutes, or boil in a pot for a couple of hours, skimming the foam off the top, until they are absolutely tender.
  6. 6Strain the cooked chickpeas and allow them to cool.
  7. 7Drop the cooled chickpeas into your food processor.
  8. 8Add tahini (sesame paste) to the food processor.
  9. 9Blitz the mixture in the food processor for about a minute until mixed but still thick.
  10. 10Drop in a few ice cubes.
  11. 11Add a splash of lemon juice.
  12. 12Give it another mix.
  13. 13Scrape down the sides of the food processor.
  14. 14Add salt to taste.
  15. 15If too thick, add a little more ice or cold water.
  16. 16Give it one more go in the food processor until it reaches the desired smooth texture.
  17. 17Cut the Wagyu beef into beautiful chunks.
  18. 18Allow the chunks of fat to melt in your pan.
  19. 19Drop in the beautiful steak and cook.
  20. 20Towards the end of cooking, add some pine nuts.
  21. 21Add a tiny splash of paprika.
  22. 22Finish with a pinch of salt.
  23. 23Pour the cooked beef onto the prepared hummus.
  24. 24Serve with pita bread.
