Leftover Rice with Avocado, Fried Egg, Soy Sauce, and Chili Oil

Directions

  1. 1Once cooked, take any leftover rice and spread it out onto a flat surface like a plate or half sheet tray to cool it down quickly and keep it fluffy for reheating.
  2. 2Once the rice is cool, transfer it into airtight containers and store it in the fridge.
  3. 3In a pan over low to medium heat, add a tablespoon or two of olive oil.
  4. 4Once the oil is hot, add the rice to the pan.
  5. 5Using your hand or a rubber spatula, press the rice out flat in your pan.
  6. 6After about three to four minutes, the rice will start to toast on the bottom of the pan.
  7. 7Fold your crispy layer into the rest of the rice.
  8. 8Repeat this process as many times as you like to achieve a desired mix of crispy and chewy rice.
  9. 9Transfer the toasted rice to a bowl.
  10. 10Add some avocado to the bowl.
  11. 11Add a fried egg on top of the rice and avocado.
  12. 12Drizzle with a little bit of soy sauce.
  13. 13Add a spoonful of chili oil.
