Tips
For frozen cod, thaw by placing fillets in a large ziploc bag, removing air, and submerging in cold water for two 15-minute intervals, pressing out excess water after thawing.
You can leave the peel on ginger, just wash it before cutting.
Adjust red curry paste to your spice preference (1-2 tbsp recommended).
