Chop onion, garlic and ginger.

Dice the beef and separate the fatty parts.

Render the beef fat in a pot until it releases oil.

Sauté the garlic, ginger, and onion in the rendered beef fat.

Add the rest of the beef to the pot.

Season with salt and pepper.

Sauté until the beef is slightly browned.

Add hot water to the pot.

Bring to a boil.

Add lemongrass.

After 20 minutes, remove the lemongrass.

Let it boil until the beef is tender.

Add vinegar.
