Directions

  1. 1Soak 3 oz of dried shrimp in 5 cups of hot water for at least 30 minutes.
  2. 2In a bowl, combine 14 oz of prawn in spices, 6 oz of canned crab meat, 1 lb of ground pork, and 2 eggs. Mix well and set aside.
  3. 3Heat 1/4 cup of oil in a wok. Add 10 cloves of minced garlic and saute until fragrant.
  4. 4Add 1 small diced onion and saute until translucent.
  5. 5Add 5 roma tomatoes (cut into wedges) and 1 tbsp of fish sauce. Saute for a couple of minutes until tomatoes hold their shape.
  6. 6In a large pot, combine 2 liters of water and the reserved shrimp liquid from soaking. Bring to a boil.
  7. 7Add blanched pork spareribs and bring back to a boil. Reduce heat and simmer for 30 minutes, skimming off any foam.
  8. 8Add sauteed tomatoes, salt, sugar, tamarind powder, and shrimp paste. Mix until dissolved.
  9. 9Add fried tofu and the meat paste (1 large spoonful at a time). Cook until the meat paste floats to the top.
  10. 10Serve the broth over shredded cabbage, scallions, cilantro, and thinly sliced onions.
