One Pan Pad Thai

Directions

  1. 1Preheat oven to 400F
  2. 2In a casserole dish add all the sauce ingredients and mix well.
  3. 3Crack in 2 eggs to the sauce and whisk to combine.
  4. 4Spread the noodles on the bottom of the pan and top with the chopped chicken breast, sliced shiitake, sliced bell pepper, and sliced green onions.
  5. 5Gently stir top ingredients to coat and combine.
  6. 6Place the pad Thai in the oven and bake for 15 minutes.
  7. 7Gently remove from oven, stir, and put back in the oven for another 10 minutes.
  8. 8Remove and stir again, placing it back in the oven for a final 10-15 minutes when the sauce has fully incorporated into the noodles.
  9. 9Remove from oven then add the bean sprouts and peanuts and stir to combine.
  10. 10Serve yourself a plate and garnish with more chopped peanuts, green onions, and a squeeze of a lime.

  • 300 g Pad Thai noodles
  • 1 lb chopped chicken breast or thigh
  • 2 eggs
  • 5 green onions, thinly sliced
  • 5 oz sliced shiitake
  • 1 red bell pepper
  • 1 cup fresh bean sprouts
  • 0.33 cup chopped peanuts
  • 1.25 cup coconut milk
  • 1.25 cup chicken bone broth
  • 3 cloves garlic, grated or chopped
  • 0.25 cup fish sauce
  • 4 tbsp tamari sauce
  • 0.25 cup coconut sugar
  • 5 tbsp rice vinegar
  • 2 tbsp sriracha
  • 2 tbsp peanut butter
  • 0.25 cup chopped peanuts
  • 2 limes
  • 5 green onions (use the green part)
