Coconut Milk Poached Flaky Black Cod with Lime Fish Sauce Orzo

Directions

  1. 1Thinly slice garlic, red chili, and yellow onion.
  2. 2Mince ginger.
  3. 3Add oil to a pan on medium heat.
  4. 4Add sliced garlic, red chili, yellow onion, and minced ginger to the pan.
  5. 5Cook the vegetables down until softened and aromatic for about five minutes.
  6. 6Season with a pinch of salt and pepper.
  7. 7Deglaze with a little bit of chicken stock.
  8. 8Add a whole tin of light fat unsweetened coconut milk.
  9. 9Add half a tin of full-fat coconut milk.
  10. 10Add another touch of salt.
  11. 11Add a flash of fish sauce.
  12. 12Squeeze in half of a lime.
  13. 13Cover and let simmer on medium-low for about 20 minutes to reduce and thicken.
  14. 14Remove and pat dry the fish.
  15. 15Season fish with salt and black pepper.
  16. 16Delicately lay the fish into the poaching liquid.
  17. 17Baste the fish with the liquid using a spoon until cooked through for about five to seven minutes.
  18. 18For the base, add orzo to a bowl.
  19. 19Place a piece of black cod over the orzo.
  20. 20Spoon the coconut milk sauce over the fish and orzo.
  21. 21Squeeze fresh lime juice over the dish.
  22. 22Add fresh dill.
  23. 23Add green onions (granions).
  24. 24Drizzle with chili oil.
  25. 25Add Caliente Crunch.
