Bacon Fried Rice

Directions

  1. 1Prepare the sauce by mixing soy sauce, oyster sauce, sesame oil, and sugar in a bowl.
  2. 2Cook chopped bacon in a wok until it's crispy, rendering out the fat.
  3. 3Add minced garlic to the bacon fat and stir to infuse the flavors.
  4. 4Add peas to the wok and stir.
  5. 5Add the day-old rice to the wok.
  6. 6Pour the prepared sauce around the edge of the wok.
  7. 7Stir everything together until well combined and the rice is evenly coated.
  8. 8Fry an egg in a separate pan, basting it with hot oil until the edges are lacy and the yolk is golden.
  9. 9Flip the egg quickly to set it.
  10. 10To assemble, spread chili oil on a plate.
  11. 11Place the fried egg on top of the chili oil.
  12. 12Pack the fried rice right on top of the egg in a bowl, without squishing it too hard.
  13. 13Flip the bowl onto the plate to present the fried rice with the egg on top.

Tips

  • Day old rice is best, but if using fresh rice, spread it on a tray and chill it in the fridge before use.
  • The sauce always goes around the edge of the wok so it smokes and sizzles.
  • Baste the egg in hot oil so the edges go lacy and the yolk stays golden, then a quick flip just enough to set it.
