Simple Slow Cooker Beef and Broccoli

Directions

  1. 1Add the 2-pound chuck roast, cut into thin strips, to your slow cooker.
  2. 2In a separate bowl, combine 1 cup of beef broth, 1/2 cup of soy sauce (or coconut aminos), 1/4 cup of brown sugar, 1 tablespoon of sesame oil, and 4 minced garlic cloves.
  3. 3Whisk the sauce ingredients together thoroughly.
  4. 4Pour the whisked sauce over the beef in the slow cooker.
  5. 5Ensure every piece of beef is coated in the sauce.
  6. 6Put the lid on the slow cooker and set it to low for 3 hours.
  7. 7At 2 and a half hours, remove the lid, give the beef a quick stir, and taste a piece.
  8. 8In a small bowl, whisk together 4 tablespoons of water and 2 tablespoons of cornstarch to create a slurry.
  9. 9Pour the cornstarch slurry into the slow cooker with the beef.
  10. 10Add a head of broccoli, cut into florets, to the slow cooker.
  11. 11Stir the broccoli into the beef and sauce mixture.
  12. 12Replace the lid and cook for an additional 30 minutes.
  13. 13After 30 minutes, remove the lid.
  14. 14Serve the beef and broccoli over rice and sprinkle with sesame seeds.
