  5. 5Combine rice flour, tapioca starch, and water in a bowl.
  6. 6Whisk the mixture until smooth.
  7. 7Oil the bottom of a pan.
  8. 8Pour just enough batter into the pan to barely coat the bottom.
  9. 9Create a steamer using a large skillet filled with water and a trivet.
  10. 10Place the pan with the batter into the steamer.
  11. 11Cover with a lid and steam for 4 minutes.
  12. 12Remove the noodle sheet and oil up the top of the sheet so it doesn't stick together.
  13. 13Carefully remove the noodle sheet from the pan.
  14. 14Cut the noodle sheet to your desired width.
  15. 15Repeat the steaming and cutting process until all noodles are made.

  17. 17Whisk the sauce ingredients together.
  18. 18Separate the gailan leaves from the stems.
  19. 19Cut the gailan stems in half and chop the leaves.
  20. 20Fry some garlic in oil in a pan.
  21. 21Add the marinated chicken to the pan and cook until browned.
  22. 22Add the gailan stems to the pan and cook for a few minutes.
  23. 23Toss in the gailan leaves.
  24. 24Once the leaves are slightly wilted, push everything to the side.
  25. 25Crack in a couple of eggs and scramble them.
  26. 26Mix the scrambled eggs with the chicken and gailan.
  27. 27Remove the cooked chicken, gailan, and eggs from the pan.
  28. 28Fry some more garlic in the pan.
  29. 29Add the rice noodles to the pan and pour over the sauce.
  30. 30Turn up the heat so the noodles soak up the sauce and start to caramelize.
  31. 31Add back the gailan, chicken, and eggs to the pan.
  32. 32Sauté everything together until well combined and heated through.
