Thinly slice chicken.

Season the chicken with salt, white pepper, soy sauce, oil, and cornstarch.

Mix the chicken and seasonings thoroughly.

Combine rice flour, tapioca starch, and water in a bowl.

Whisk the mixture until smooth.

Oil the bottom of a pan.

Pour just enough batter into the pan to barely coat the bottom.

Create a steamer using a large skillet filled with water and a trivet.

Place the pan with the batter into the steamer.

Cover with a lid and steam for 4 minutes.

Remove the noodle sheet and oil up the top of the sheet so it doesn't stick together.

Carefully remove the noodle sheet from the pan.

Cut the noodle sheet to your desired width.

Repeat the steaming and cutting process until all noodles are made.

Combine soy sauce, dark soy sauce, oyster sauce, rice vinegar, water, and sugar in a bowl to create the sauce.

Whisk the sauce ingredients together.

Separate the gailan leaves from the stems.

Cut the gailan stems in half and chop the leaves.

Fry some garlic in oil in a pan.

Add the marinated chicken to the pan and cook until browned.

Add the gailan stems to the pan and cook for a few minutes.

Toss in the gailan leaves.

Once the leaves are slightly wilted, push everything to the side.

Crack in a couple of eggs and scramble them.

Mix the scrambled eggs with the chicken and gailan.

Remove the cooked chicken, gailan, and eggs from the pan.

Fry some more garlic in the pan.

Add the rice noodles to the pan and pour over the sauce.

Turn up the heat so the noodles soak up the sauce and start to caramelize.

Add back the gailan, chicken, and eggs to the pan.

Sauté everything together until well combined and heated through.
