Directions

  1. 1Prep the large potatoes by cleaning them.
  2. 2Poke the potatoes all around with a fork.
  3. 3Cover the potatoes with oil.
  4. 4Season the potatoes with garlic salt, regular salt, and black pepper, ensuring both sides are coated.
  5. 5Wrap the seasoned potatoes in foil.
  6. 6Place the wrapped potatoes on a baking sheet.
  7. 7Bake the potatoes at 400 degrees Fahrenheit for about 1 hour or until soft.
  8. 8Prepare the meat seasoning by mixing all the spices together.
  9. 9Cut the steak into small cubes.
  10. 10Sprinkle the seasoning all over the steak.
  11. 11Squeeze the juice of half an orange over the steak.
  12. 12Sprinkle some oil over the steak.
  13. 13Mix everything thoroughly to ensure the steak is nicely coated.
  14. 14Add chopped onion and cilantro to the steak.
  15. 15Cover the seasoned meat and refrigerate it until it's time to cook.
  16. 16Check if the potatoes are done using a wooden skewer.
  17. 17Heat a pan over medium-high heat.
  18. 18Add the seasoned meat to the hot pan and cook it.
  19. 19Once the meat is cooked, open up a potato.
  20. 20Squeeze the potato open using a kitchen towel or paper towels.
  21. 21Add butter to the potato.
  22. 22Season the potato with salt and black pepper.
  23. 23Smash out the potato flesh.
  24. 24Top the potato with queso Oaxaca and medium shredded cheese.
  25. 25Place the potato back in the oven to melt the cheese.
  26. 26Once the cheese is melted, top the potato with the cooked carne asada.
  27. 27Drizzle some crema Mexicana over the loaded potato.
  28. 28Drizzle some crema chipotle over the loaded potato.
  29. 29Top it with guacamole.
  30. 30Add pico de gallo on top.
  31. 31Sprinkle some queso fresco.
  32. 32Serve and enjoy the Papas Locas.
