One pot taco rice

Directions

  1. 1Brown up 1 lb of ground beef in a pot.
  2. 2Drain any excess grease from the ground beef.
  3. 3Add in 1 packet of taco seasoning, 2 cups of beef broth, and 1 cup of salsa.
  4. 4Mix all ingredients together.
  5. 5Optional: Add in a can of diced green chilies.
  6. 6Bring the mixture to a boil.
  7. 7Once it starts boiling, add in 2 cups of instant rice.
  8. 8Give the mixture a good stir.
  9. 9Switch heat to low, cover, and cook for 8 minutes.
  10. 10Give it one final stir before covering it evenly with about 1 cup of shredded Colby Jack cheese.
  11. 11Pop the lid back on for another 2 to 3 minutes, just until the cheese is nice and melted.
