Brown up 1 lb of ground beef in a pot.

Drain any excess grease from the ground beef.

Add in 1 packet of taco seasoning, 2 cups of beef broth, and 1 cup of salsa.

Mix all ingredients together.

Optional: Add in a can of diced green chilies.

Bring the mixture to a boil.

Once it starts boiling, add in 2 cups of instant rice.

Give the mixture a good stir.

Switch heat to low, cover, and cook for 8 minutes.

Give it one final stir before covering it evenly with about 1 cup of shredded Colby Jack cheese.

Pop the lid back on for another 2 to 3 minutes, just until the cheese is nice and melted.

Tips
Give it one final stir before covering with cheese.
