Moong Sangri Tacos

Directions

  1. 1Add chilled oil, chilled milk, black pepper powder, salt, and peri peri powder into a bowl.
  2. 2Blend the mixture with a hand blender until it becomes creamy to make homemade mayonnaise.
  3. 3Add soaked moong dal, dry red chilies, and salt into a mixer grinder.
  4. 4Grind the ingredients to a coarse paste.
  5. 5In a pan, add oil, jeera, hing, red chili powder, turmeric powder, coriander powder, amchur powder, and salt.
  6. 6Add boiled Sangri to the pan and mix well to prepare the Sangri sabzi.
  7. 7Cut rotis into small rounds using a round cutter.
  8. 8Spread a generous amount of the moong dal mixture on one side of the small rotis.
  9. 9Grease a pan with oil and place the rotis on the pan with the moong dal side down.
  10. 10Cook the rotis on both sides until they are nice and crispy and golden brown.
  11. 11Place a cooked roti on parchment paper.
  12. 12Add a spoonful of mayonnaise on top of the cooked moong dal mixture.
  13. 13Add a spoonful of Sangri sabzi on top of the mayonnaise.
  14. 14Fold the taco.
  15. 15Serve the tacos hot.

  • 0.5 cup chilled oil
  • 0.25 cup chilled milk
  • 1 tsp black pepper powder

  • 1 tsp homemade Jain peri peri masala
  • 0.5 cup soaked moong dal
  • 3 dry red chili
  • rotis
  • for pan frying oil
  • 0.5 cup boiled Sangri
  • 0.5 tbsp oil
  • 1 tsp jeera
  • 1 pinch hing
  • 1.5 tsp red chili powder
  • 0.25 tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tsp amchur powder

Tips

  • Milk and oil for mayonnaise need to be chilled for at least 3 hours.
  • You can use any green vegetables of your choice if making a regular version.
